Before we got on the train this morning, Ella bought a bento box with eel laid out on a bed of rice. While we were heading to Okayama (to transfer trains to Naoshima), she opened the box and dined. It was the best meal we had all day.

Interesting.. never had ell !
Don’t see eel much in NM except in sushi places (but cooked, not raw). The taste is sort like a mild white fish but more tender.
There are two distinct kinds: fresh water and salt water. Often found at sushi bars; cooked, not raw like most sushi.
This is conger eel which is saltwater (anago). We’ve only had it cooked so far. Freshwater eel is unagi. Haven’t seen it here.
So far when it comes to eel for me, it’s all about the sauce. Grilled with a teriyaki sauce it’s tasty.
