Among other things (like gold leaf and fu buns, snow crab and sea bream sushi), Kanazawa boasts production of the finest sake made with premo water straight from the mountain and locally grown rice.
Our apartment host (Bill Smith…anyone think that’s not an alias?) prides himself on local sake knowledge so I asked “where can I buy a bottle of Yuzu Sake?” From the look on his face, I surmised I’d stepped over the line of sake no-nos. Bill is American by the way. First non Japanese host we’ve run into although I don’t know if he owns this 5 apartment hotel.but he does everything. Been here 18 years and never going back Still votes and not for the current regime.

Back to the sake…In case you don’t remember, I had a glass of yuzu sake offered by one of our guesthouse hosts when we were hiking the Kumano Kodo. Yuzu is a citrus fruit. I could drink a lot of that! Only a hint of sake flavor along with a lot of citrus goodness.
I did try some regular old plain sake today. I have had sake in the past in the US. Didn’t enjoy it then. Still don’t. Even made with fresh water from the mountain water. Going back to umeshu.
