There is a lot of overlap between Argentinian and Uruguayan food. Both are heavily beef based. In Uruguay at least, all cattle are grass fed.
One dish that originated in Uruguay is the pamplona. Made of deboned chicken or pork, rolled and stuffed with cheese, ham, sweet pepper and sometimes olives, then grilled. Served with a small dish of chimichurri and salsa.
After our walking tour yesterday and more wandering on our own, we headed back down to the Mercado de Puerto. We both wanted to try the pamplona. We were not disappointed.
